Charlie’s Mexican Restaurant was established in 1962 as one of the first Mexican restaurants in Western Kansas. They continue to use Charlie’s original recipes for items such as Charlie’s Special – a fried flour tortilla with refried beans, Charlie’s pork chili, topped with shredded cheese, lettuce and tomatoes, Chile Relleno dinners, the Matador and their delicious Chile Verde dinner.
